The grapes are carefully gathered and handled. Debourbage after 6 hours. Alcoholic fermentation with selected yeasts at low temperatures. Fresh resin (Aleppo pine) is added at about 0.2%.
Pale yellow colour. Resin, mastic and ripe fruit aromas. Full flavour, with finesse and hints of resin. Ideal with various traditional dishes of the Mediterranean like fried seafood platters or meat platters with fresh vegetables.
